when you chase them from something, they'll come back again and again, do i call that boldness, courage or what?

I wouldn't say or i don't think goats are stubborn. You just have to learn how to think like a goat and you'll understand them better. It's just normal for a goat to see food and go after it. Most instances where you see goats being stubborn, it's because they see something especially food that they want and go after. So if your goat is well fed, you're unlikely going to have it going or doing what you don't want it to do.
